Grilled cod or zander on fennel vegetables

Ingredients:

Cod or zander fillet, coarse sea salt, salt, freshly ground black pepper
Olive oil, fennel, aniseed, lemon, lime, celery leaves, dill, red and orange peppers, spring onion, garlic

Preparation:

Charcoal grill, gas grill or grill pan
Cook the fish either skin side down for 6-8 minutes (depending on thickness) in a grill pan or on a charcoal or gas grill. Peel the fennel and cut lengthwise into slices. Peel and quarter the peppers and remove the ribs and seeds.
Heat the grill pan with olive oil and grill the vegetables in it. Season the peppers with salt and add the chopped garlic. Season the fennel with salt and aniseed.
Season the grilled fish with sea salt and pepper and serve with the vegetables. Finely slice the spring onion and serve with the celery greens, dill, lemon and lime slices.
